High tea at Bacar Restaurant is more than a meal—it’s a meticulously curated affair that blends elegance, culinary artistry, and Australian-inspired flavours. Located within the Pullman Sydney Olympic Park, Bacar exudes modern sophistication, setting the stage for a truly memorable afternoon.

Guests are welcomed with a chilled glass of Kylie Minogue’s signature Prosecco Rosé. The bubbly’s delicate effervescence and notes of fresh strawberries and rose petals instantly provide a delightful aperitif. The rosé’s light, fruity character sets a celebratory tone for the afternoon. The restaurant’s décor features sleek, contemporary lines balanced with warm, ambient lighting, creating a luxurious yet inviting space.

The Cristina Re Celestite collection adds a touch of glamour to the occasion. The fine teaware, with its celestial-inspired design, gilded accents, and pastel hues. It perfectly complements the opulent yet approachable high tea spread, enhancing the sense of occasion.

Executive Chef Marvin Ma showcases his passion for Australian ingredients through a menu that marries traditional high tea elements with locally inspired innovations.

The savoury selection offers a delightful balance of flavours and textures.

  • Cured Salmon Crepe: The silky salmon paired with cucumber and bursts of salty salmon roe offered a refreshing yet indulgent bite.
  • Smoked Duck Breast: The tender duck and sweet, tangy pickled baby figs balanced beautifully on the fluffy focaccia.
  • Truffle Egg Sandwich: A velvety, aromatic favourite, the truffle enriched the creamy egg filling, making it irresistibly decadent.
  • Mushroom Arancini: Crispy on the outside and packed with earthy mushroom flavours inside, the arancini was elevated by a dollop of creamy aioli.

The sweet offerings were equally impressive.

  • French Macarons: These delicate confections provide a delightful crunch and soft, from matcha, lemon, and caramel centres to excite the palate.
  • Assorted Les Chouchous: A delightful medley of flavours and textures; we tasted double chocolate, double raspberry and a nutty caramel & vanilla.
  • Spiced Buttermilk Raisin Scone: Paired with rosella jam and wattle seed cream, this quintessential high tea staple showcased a uniquely Australian twist, with hints of spice and floral sweetness.
  • Dessert Trolley: A highlight of the experience, the dessert trolley offered an array of luxurious sweets, allowing guests to indulge their cravings further.

The attentive service at Bacar Restaurant adds another layer of delight to the experience. From the moment you arrive, the staff is warm, knowledgeable, and eager to ensure your afternoon is nothing short of perfect. With each dish presented, the team is there to offer guidance, share the story behind each creation, and anticipate your every need, making it feel like a true luxury affair.

The High Tea Affair is available every Saturday from 1:30pm to 4:00pm and is priced at $79 per person ($71 per person for Accor Plus members). While the experience was largely exceptional, one area for potential improvement would be the tea selection. While the beautiful Cristina Re teaware begs for a curated tea pairing, the menu didn’t offer any specific tea options. Offering a selection of premium teas, perhaps with tasting notes to complement the food offerings and the exquisite tea set, would elevate the experience even further.

Dilmah Exceptional Rose with French Vanilla offers a delicate blend of floral rose and creamy vanilla, creating a fragrant and soothing cup. For a bold and refreshing choice, Dilmah Ceylon Silver Tips White Tea provides a light, subtly sweet profile with hints of honey and peach. Those seeking a touch of citrus can enjoy Dilmah Earl Grey with Honey, a vibrant black tea infused with the floral notes of bergamot and a hint of natural honey sweetness. Finally, Dilmah Peppermint and English Toffee combines the cooling freshness of peppermint with the indulgent richness of toffee, delivering a unique twist on classic flavours.

Executive Chef Marvin Ma shares his enthusiasm for the high tea experience, saying, “This is a celebration of flavour and finesse, where every bite tells a story of Australian inspiration.” As for the age-old debate about scones, he adds with a laugh, “For me, it’s always jam first, then cream—there’s just something about the way the sweetness and richness come together that feels right!”

For those seeking an afternoon of indulgence and refinement, Bacar’s High Tea Affair is sure to leave a lasting impression.
