As the days grow darker and the temperatures dip, summer spritzes are stepping aside for the one of the most classic serves, the martini – the cocktail of choice for those craving something more refined, more personal. Leading the revival is prestige vodka GREY GOOSE, who has joined forces with Melbourne’s playful Latin American diner Pincho Disco to reimagine the iconic serve through a creative lens. The result? An exclusive martini cocktail experience paired with a selection of bold, Latin-inspired dishes.

Launching 19 June to celebrate Martini Month, the bespoke menu will be available until the end of July, bringing a signature GREY GOOSE twist to martini cocktail lovers across the city.

To guide guests on their martini journey, Pincho Disco and GREY GOOSE have created a Martini Cocktail Swatchbook – an interactive tool designed to demystify the classic serve and help drinkers select their perfect martini cocktail. From smoky and savoury to crisp and citrusy, each martini on the menu has been carefully designed to complement the vibrant Latin-leaning menu at Pincho Disco, with curated food pairings to match. Guests can indulge in;

  • The Mexican Martini ($19)- A Latin-inspired twist on the classic, the Mexican Martini combines GREY GOOSE vodka with spiced Mexican vermouth and a hint of chilli oil. Complex, warming, and full of character, this cocktail is best paired with the pickled mussel tostada, avocado cream, and rocoto ($19) — where the chilli and vinegar spice mirror the martini’s bold flavour.
  • Classic Grey Goose Martini ($19) – A refined variation on the original, this martini features Grey Goose vodka and French champagne vermouth, served with a lemon twist. Crisp, elegant, and effortlessly indulgent, it pairs beautifully with the snapper ceviche, passionfruit, and orange tiger’s milk ($24) — the bright citrus notes enhancing the martini’s clean finish.
  • Smoked Dirty Martini ($19) – A bold reimagining of the traditional dirty martini, this version combines GREY GOOSE vodka with rosemary smoked olives for a rich, herbaceous, and deeply satisfying serve. It’s best enjoyed alongside octopus tentacle with potato, olive cream, and salsa verde ($28) – where savoury olive and herbal flavours resonate perfectly.
  • Goosebumps ($36) – Few things say luxury like a premium caviar bump, especially when paired with an icy pour of GREY GOOSE Altius, the new prestige vodka made for slow, deliberate sipping. Inspired by alpine elegance and crafted for the ritual, this refined pairing is the ultimate indulgence, available only at select venues across Australia.

Meanwhile, sister venue Cinder, tucked inside the historic bluestone walls of the 150-year old Terminus in Fitzroy North is also getting in on the Martini Month action. Guests can enjoy another bespoke limited- edition menu that pairs bold, beautifully crafted martinis with signature dishes from the wood-fired kitchen including;

  • The Mediterranean ($19) – A bright, elegant martini with zesty lemon aromas and a smooth, floral finish. This martini is perfectly matched with an oyster topped with pickled shallot, green apple and cucumber granita ($9), for a fresh, briny burst.
  • The Marbled Martini ($19)- offering a velvety, umami-rich and savoury sip, balanced by saline brine and a buttery, lingering finish, the Marbles Martini is best enjoyed alongside Wagyu short rib with onion, truffle dauphinoise and green peppercorn jus ($44).
  • The Porn Star Martini ($19) – A vibrant, seductive mix of tropical passionfruit and zesty lime, served with a playful splash of prosecco. It’s perfect pairing? Flame grilled calamari with charred green onion, preserved lemon and Osaka dressing ($26).
  • French Martini ($19) – A classic reimagined, the French Martini delivers a lush, fruity profile with an elegant twist, paired with coal-baked Canadian scallop and Café de Paris butter ($9).
  • Flying Fox ($19)- A rich, smooth and velvety martini with bold notes of roasted coffee and caramel best sipped alongside a choice of sweet bites such as the pistachio & white chocolate delice (18), goat cheese panna cotta with raspberry & honey ($18), or a caramelised lemon tart with vanilla cream ($18).
  • Goosebumps ($36) – Guests at Cinder can caviar bump action and experience the latest in luxury vodka, GREY GOOSE Altius with the fun Goosebumps serve.
