I had the privilege of experiencing the ‘Tea Cocktails Omakase x Hsiang Chef Table,’ a $145 per person journey that is as exclusive as it is delightful. Available only on Sundays and Mondays, this tea-inspired cocktail experience is limited to just six guests per session, ensuring a personalized and immersive experience.

The menu is ever-changing, crafted weekly based on the freshest fruits, botanicals, and teas available. This ensures that no two visits are ever the same. The experience includes five innovative tea cocktails: one aperitif, three main cocktails, and one digestif. For those who prefer to avoid alcohol, a non-alcoholic pairing is available upon request, offering an equally delightful experience.

The cocktails are paired with seven exquisite bar bites, curated by Chef Hsiang Chen for August and September. The dishes are a testament to Chef Chen’s skill, seamlessly blending Taiwanese flavours with modern techniques. A few standout dishes included the Black Angus Beef Tartare with Taiwanese pickles and salty egg yolk shaving, the Taiwanese-infused octopus leg with smoked oyster mayonnaise, and the Wagyu Skewer smoked with cedar wood and glazed with Kyoto white miso. Each dish is a work of art, both visually and in terms of flavour, perfectly complementing the cocktails they are paired with.
