On Friday 6 December, Bankstown Sports Club announced the opening of a new steakhouse, Marrow & Co.
The menu showcases 13 different cuts that highlight the diversity and quality of local produce. Diners can choose from an array of steaks, including grass-fed, grain-fed, dry-aged, wagyu, bone-in, and secondary cuts, meticulously selected to provide a variety of textures and flavours. A signature dish and centrepiece of the menu is the Riverine Tomahawk, a massive steak dry-aged on-site for up to four weeks. Weighing approximately 1.5kg, this impressive cut is displayed in a specialised dry-aging fridge, allowing guests to handpick their steak before it is expertly grilled. This interactive process, combined with the theatre of selecting the cut, offers a unique and engaging dining experience that sets Marrow & Co apart from other steakhouses.
A selection of classic steakhouse starters complements the focus on steak. Guests can indulge in finely seasoned hand-cut beef tartare, a silky chicken liver parfait served with house-made pickles, and a decadent truffled brie cheese soufflé that marries the richness of brie with the earthy notes of truffle. For those seeking a show-stopping centrepiece to share, the Beef Wellington is an unmissable highlight. Featuring a 400g Grasslands Eye Fillet encased in flaky puff pastry, layered with prosciutto, mushroom duxelle and rich pâté, this iconic dish is served with creamy mashed potatoes and your choice of sauce.
At the helm is Evan Burgess, the Culinary Director of Bankstown Sports Club, who brings more than two decades of culinary expertise to the role. With a career that spans prestigious venues in both Australia and London, including Michelin-starred restaurants like The Ledbury and Pied à Terre, Burgess has cultivated a passion for exceptional food and dining experiences. His vision for Marrow & Co is to create a steakhouse that not only delivers on the quality of its food but also provides a memorable and welcoming atmosphere for patrons.
Burgess expressed his excitement about the opening, stating, “Marrow & Co is more than just a place to eat—it’s a destination where we’ve combined the art of steak preparation with a setting that makes people feel at home. The combination of classic steakhouse fare with contemporary elements allows us to offer something special to our guests, whether they are passionate steak lovers or simply looking for a great meal in a relaxed and welcoming environment. The cocktail menu presents fresh takes on timeless classics, infused with a sophisticated Manhattan-style twist. The wine list, curated by acclaimed sommelier Ben Moechtar, reflects nearly three decades of expertise, balancing contemporary and iconic wines that emphasise varietal authenticity, food pairings, and accessibility. Guests can also enjoy house-brewed craft beers from Bankstown Sports’ Basement Brewhouse.

Etic’s vision emphasises a harmonious balance of classic steakhouse elements with contemporary touches that keep the space fresh and welcoming. Each detail has been crafted to create a cosy, immersive environment that transports guests while also feeling familiar and inviting.
At the heart of Marrow & Co. is its unique layout, featuring two charming dining carriages, each outfitted with plush leather seating, aged brass accents, and rich wooden panelling. These carriages create a sense of nostalgia, reminiscent of elegant train journeys from a bygone era, while the overall ambience is vibrant and lively, ideal for intimate dinners or social gatherings.
