Specialty coffee roasters, Toby’s Estate, have opened the doors to their new café,  25 Martin Place. The striking venue in Sydney CBD’s newest and most luxurious retail and dining precinct showcases an elevated dining experience that pairs perfectly with its specialty coffee offering.

Throughout the last 25 years, Toby’s has launched numerous venues and lent on multiple concepts, including, and most recently, its renovated Flagship “home” on City Road, Chippendale. However, no other venue pushes luxury limits like 25 Martin Place. Whilst specialty coffee will always remain at the heart of each Toby’s Estate venue, they have taken a much more elevated dining and design approach with the latest opening. The new venue boasts a beautifully curated brunch menu, slick interiors, luxurious leather booths and a huge terrace overlooking bustling King street.

Ali Akl, Director of AMA Hospitality, brand licensees of Toby’s Estate said: “Having the experience of opening 8 Toby’s across Sydney CBD, my vision for 25 Martin Place was to elevate the overall dining concept and compliment Toby’s phenomenal specialty coffee. The cafe had to seamlessly fit-in with the luxury surroundings and become the coffee hub for those who flock to the precinct. This site in particular is about legacy for me, and I’m proud of what the team have delivered.”

At 25 Martin Place, guests choose their favourite coffee from the complete range including the Toby’s classic blends, Single Origin espresso and filter line-up and all limited-edition releases.

As a new height of dining, Toby’s have engaged Head Chef, Sam Woo (ex-Hubert and Bennelong), and Sous Chef, Noah Lee (ex-Hubert and Icebergs) who have come together to create a unique, spring-inspired a la carte menu, designed specifically to cater to the crowds from 7.30am to 3pm Monday to Friday. The menu is complete with breakfast, brunch and lunch options to cater for all appetites and day-dining moments.

Woo’s beautifully curated menu includes breakfast standouts like ‘zucchini fritters with cheese crackers and a sweet potato puree’, ‘french toast with candied walnut, blood orange, mascarpone cheese and berry compote’ and ‘10 grains steamed, puffed and fried with sauteìed mushrooms, smoked chorizo and a free-range poached egg’.

For something light at lunch, the ‘stracciatella with chestnut, peas and asparagus’ or the ‘watermelon steak with kalamata olives, heirloom cherry tomato, pickled and fried eschalot’ are ideal options, or if you’re looking for a more substantial dish for a business lunch or social catch up there’s the ‘cheese burger on a brioche bun, 180g Angus beef patty, bacon, lettuce, tomato and caramelised onion’. An array of fresh pastries pair perfectly with coffee for those on the go.

The 300 sqm space makes it one of Toby’s Estate’s biggest cafes and has been designed to take the usual in-venue experience to a luxurious level, in line with the tone of the precinct it is housed in. The masterminds behind the sleek, minimalist interior, Studio MKZ, had the vision to create a unique, tailored yet bold space through materiality, form and light.

The counter and kitchen at the epicentre of the large curved room are composed of raw natural stone and stainless steel. As you follow the curve around, the back wall is lined with large, comfortable black leather booths with round tables that seat up to 5 guests, perfect for city workers to catch up over breakfast, brunch or more serious business meetings.

The flow of natural sunlight from the ceiling illuminates the space creating a holistic ambience. An expansive outdoor terrace attracts a beautiful breeze for those warm summer days and is the perfect escape from the four walls of office space.
