Sydney’s ultimate Summer Sesh destination

Sunday’s are slowly becoming one of my favourite days of the week and after visiting the Hyatt Regency recently, it’s definitely been reaffirmed.

I was invited to check out the newly launched Sunday seafood brunch at the Hyatt Regency and to be honest, I was initially sceptical as I’m not a huge fan of buffets. I find you get back to your table and your plate resembles a gathering at the UN rather than a cohesive meal; hash brown and dumplings, why not? I’m often disappointed with the quality of food where freshness is always substituted for variety

Well, this experience blew that out of the water.

The seafood brunch launched in early February and is available every Sunday between 12 pm and 2 pm. For $78 per person, you get access to the seafood full buffet with Dessert Table and limitless Chandon sparkling wine.

My partner and I decided to jump on the ferry and head to Barangaroo wharf and walk the short 10-minute distance to get to the hotel. When we arrived, I was instantly giddy as we often stay in Airbnb when we travel so entering the foyer was extra special- note to self: go back to hotels!

When we arrived at Sailmaker, Hyatt Regency’s hotel restaurant, my eyes began to dance around the room wondering where I would begin my culinary journey. As we walked to our table, we were serenaded by a duo who played acoustic covers of all the classics and it added to the overall chilled atmosphere of the restaurant.

I decided to start with the omelette bar and opted for a seafood omelette which is made fresh before your eyes by a chef. When I returned to my table, I was pleasantly surprised to find two glasses of sparkling wine; eggs and sparkling wine, why have I not had this combo before?

The food was fresh and I rarely added a condiment to my plate as the food on its own was tasty enough. The absolute standout was the smoked salmon which saw us both going back for seconds (maybe thirds but who’s counting?)

Julie, our enchanting server, introduced herself to us as she continued to ensure our champagne glasses were never below half way throughout our dining experience. A side note here, if you can avoid driving, I definitely would, as it’s easy to miss how many glasses you’ve actually had.

After many trips around the buffet, it was time for dessert and I decided I just had to try every single dessert option available; how else would I be able to accurately review the food on offer? After tasting every delightful sweet, I can genuinely say the coconut slice is the best on offer closely followed by the gooey lemon meringue mini tarts.

With the sun glistening off the harbour and not a cloud in sight, it was too nice a day to head home so we decided to catch the lift to level 12’s Zephyr Bar and catch some of the sun’s rays with a cocktail in hand. When we arrived DJ Wildflower had just jumped on the decks and was pumping out the ultimate summer soundtrack.

The bar is modelled off the look and feel of a yacht and it’s easy to think you’re sailing through the sky. The cocktail list is impressive and on offer is a drink for every taste. The Coco Mango cocktail is the modern twist to the pina colada with a creamy coconut foam resting on mango infused Plantation white rum, mango puree, kaffir lime leaves and mango liqueur, it just screams summer!

Now if you’re after the ultimate boomerang, I recommend trying the Zephyr G&T not only is it a beautiful purple colour, it’s made by Zephyr’s exclusive Tailored Gin. A new tip I learned to capture the perfect ‘cheers’ boomerang is to start with your glasses touching and then taking them away from the other glasses, you’re welcome!

As we sipped on our cocktails and watched the day pass by. We left feeling buzzed and oh so full. There’s no doubt the Hyatt Regency is the ultimate Sunday session destination.
