Celebrity Chef Khanh Ong has teamed up with SodaStream Australia to create some surprising recipes sure to add the sparkle to your next hosted brunch or dinner party.
Kicking off the creativity, Khanh has concocted the Kingfish Song – a delightfully light fish dish that will have you looking like the next MasterChef. Backing it up is his Coconut Fizz for dessert, a fresh and luxurious take on the iconic spider that even the fanciest palette will love.
As every meal needs an accompanying beverage, Khanh has created the Cucumber Honey Spritz – a refreshing mocktail on its own or a fun cocktail when you add a dash of gin. With Khanh’s SodaStream exclusive recipes, you’ll look like a professional in no time.

Coconut Fizz
Element 1: Tropical fruits
• ⅓ cup of diced pineapple (1cm)
• ⅓ cup of diced lychee (canned is fine) (1cm)
• ⅓ cup of finely diced rockmelon
• 2 tbsp of passionfruit pulp
Method
• Mix everything and set aside
To Serve
• 2 tbsp of tropical fruits
• 1 scoop of coconut frozen yogurt
• 1 tsp toasted coconut flakes
• 1 tsp toasted almonds slivered
• Lime zest and a squeeze of juice
• Lemon balm
• 50-80ml of SodaStream sparkling water
Method
• To prepare the SodaStream sparkling water: Fill a SodaStream 1 Litre bottle with cold water and carbonate using the DUO Sparkling Water Maker.
• In a martini glass or a rounded tumbler, or a parfait glass, add the fruits and leave a small indent in the centre and fill with the frozen coconut yoghurt
• Top with coconut flakes, almonds, lime zest and micro lemon balm
• Squeeze some lime into the SodaStream sparkling water and pour around frozen yoghurt
Cucumber Honey Spritz
Element 1: cucumber honey syrup
• 300ml honey
• 300ml water
• 1 cucumber thinly sliced
• Thumb sized pieces of ginger thinly sliced
• 30 mint leaves
• 20 basil leaves
Method
• Place everything into a pot on medium heat until honey dissolves. Turn heat off and leave it too steep for 30 minutes
• Strain syrup pressing on solids in a strainer and set aside
Element 2: Cucumber mint spritz
• Highball glass
• 2tbsp cucumber honey syrup
• 1-2 tbsp freshly squeezed lime juice
• 110ml of SodaStream sparkling water
• 1 continental cucumber ribbon (use a peeling to peel cucumber lengthways
• Ice cubes
• 2 tsp passionfruit pulp
• Sprigs of mint
Method
• To prepare the SodaStream sparkling water: Fill a SodaStream 1 Litre bottle with cold water and carbonate using the DUO Sparkling Water Maker.
• In a mixing glass, mix honey syrup, lime juice and SodaStream sparkling water
• In a highball glass, place cucumber ribbon along the inside of the glass, spiralling up the glass.
• Add ice cubes ⅓ of the way up the glass.
• Pour mixed mocktail into the glass.
• Top with passionfruit pulp and a sprig of mint
Kingfish Song
• 20g caster sugar
• 2 limes
• ¼ cup fish sauce
• 2-4 cloves garlic (minced)
• 2-4 birdseye chilis (sliced)
• 1 small thumb-sized piece of ginger (grated)
• 50ml of SodaStream sparkling water
• 3 slices of sashimi-grade kingfish
• 1.5 tsp of coconut cream
• 2 tsp of nuoc mam sauce
• Sprinkle roasted sesame seeds
• Micro coriander to garnish
Method
• To prepare the SodaStream sparkling water: Fill a SodaStream 1 Litre bottle with cold water and carbonate using the DUO Sparkling Water Maker
• Mix sugar and juice of one lime in a bowl. Add in ¾ of the fish sauce
• Finely chop 2 cloves of garlic, 2 chillis and ginger and add to the sauce
• Taste and add leftover ingredients until nuoc mam sauce is balanced – it should be sweet, sour and salty with a kick of chilli
• Dilute with SodaStream sparkling water
• Place kingfish onto a small plate or ramekin and spoon over the coconut cream and nuoc mam sauce
• Sprinkle over sesame and place a few pieces of coriander on top
