Sella Vinoteca: your intimate wine tasting experience and packed with Mediterranean flavours

It’s hard to capture the old-world feel of an Italian  vinoteca,​ especially in a development as brand spanking new as the Newmarket dining precinct. Authenticity, however, was at the top of Fabio Dore’s list of requirements – he wanted to capture the essence of his grandparents’ local wine shop and restaurant. With marble offcuts lending a timeless mismatch on the floor, mirrored by raw wooden ceiling beams and the patina of a bygone era reflected in every inch of this charming establishment, it’s hard to say he hasn’t absolutely nailed it.

Fabio tells me he grew up in the Sardinian wine country, and wanted to recreate the intimate wine tasting experience you can only really find in vineyards that have been run by the same family for generations. His intense passion for wine is evident from the first, as he tells me about countless nights spent on ‘research’ – drinking wine with his head chef Marco Masotti, with whom he crafted the wine selection and menu. Most places, Fabio informs me, have the sommelier playing catch-up after the menu has been created – a trend he is eager to break, as the pair have done the complete opposite and structured their menu around the wine selection they painstakingly assembled.

Although he assures me that Italian wine is still the best, Fabio has been careful not to discriminate – with a fantastic selection of vintages from all over Europe, the wine shop is well equipped to suit whatever occasion you fancy, be it a special event or a simply a sunny afternoon. The dining menu itself is similarly impressive, with inclusions such as a marinated feta cannolo, and locally-sourced Maremma duck breast. The Mediterranean  theme runs strongly through the menu, and Fabio is on hand to offer wine pairings with every item.

Sella Vinoteca is one the newest additions to the Newmarket Randwick dining precinct, joining names like RaRa Ramen, Dumplings & Beer and Gelato Messina. Until recently, Newmarket was the site of some of Sydney’s most famous stables, and the transformation has been astounding – so head in for some of the city’s best and newest destinations.
