If you’ve been to any supermarket recently, you would’ve noticed the shelf space dedicated to milk alternatives such as oat, soy, almond, cashew and rice is expanding. Though they’re not strictly speaking ‘milk’, these plant-based beverages are gaining favour among consumers looking for a dairy-free option in their coffee mugs and cereal bowls.

So what are the benefits of plant-based milk?

  • It’s rich in vitamins and minerals
  • Most of them are low in fat
  • They do not contain cholesterol
  • They have a healthy combination of mono- and polyunsaturated fats
  • Perfect for people with a slow digestive system

Dairy alternative milks are made by blending nuts, rice or soybeans with water. The mixture is then strained through a fine-mesh sieve (lined with cheesecloth for the smoothest results) over a large bowl to filter out the solids, or through Vitamix’s reusable filtration bag. Use the milks as-is, or add vanilla extract, sweetener, or salt to taste for added flavour. The milks will keep up to three days in the refrigerator.

Cashew Milk

Create fresher, more flavorful cashew milk at home. This recipe yields 4 1/2 cups of milk from just 1 cup of nuts.

3 cups (720 ml) water
1 cup (140 g) cashews
10 Tablespoon (75 g) dates, pitted
¼ teaspoon ground cinnamon

1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
2. Start the blender at its lowest speed, then quickly increase it to its highest speed. Blend for 40 seconds.

Chef’s Notes
For even more creaminess, soak cashews for at least 4 hours. You may strain the nut milk through a fine mesh strainer or nut milk bag if desired. Store in an airtight container in the refrigerator for up to a week. Shake before serving. Our frozen dessert recipes will work perfectly by swapping this out for the liquid component.

Almond Milk

Homemade almond milk is free of preservatives and can be used for cooking, baking, pouring over cereal, or adding to coffee.

3 cups (720 ml) water
1 cup (140 g) raw almonds, soaked overnight

1. Place all ingredients into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and slowly increase speed to Variable 10, then to High.
4. Blend for 45 seconds or until desired consistency is reached.
5. Store in refrigerator. Shake well before using.

Oat Milk

Oat Milk is a delicious and creamy, nut-free alternative to traditional plant-based milks. You can customize the taste of this dairy-free milk by adding dates, vanilla extract, salt, or all three if you desire.

6 cups (1.4 l) cold water
1 cup (180 g) soaked steel-cut oats

1. Place water and soaked oats into the Vitamix container and secure the lid.
2. Select Variable 1.
3. Start machine and increase it to its highest speed.
4. Blend for 1 minute and 30 seconds.
5. Remove and strain if desired.
