Celebrated European-Australian Chef Ashley-Maree Kent has opened Brisbane’s newest Italian restaurant, Ramona Trattoria in Coorparoo.

Serving authentic, handcrafted cuisine, the 48-seat restaurant offers a polished form of casual dining. Ramona Trattoria will open its doors on Sunday, 14 August.

Starring hand-shaped pasta and hand-stretched pizza, Ramona Trattoria illustrates Ashley-Maree’s devotion to humble, handmade dishes. With an ethos that encourages locals to visit several times a week without overspending, the menu will be refreshed monthly, based on produce seasonality with ingredients sourced from provedores across Queensland. Seasonal dishes include: Pappardelle: Tuscan wild boar ragu, pecorino romano, Hand -cut Tagliatelle: ragu bolognese and parmigiano reggiano, and Agnolotti del plin: chestnut,truffle in brodo.

The hand-selected drinks list features a selection of natural and conventional Australian and international wines and bespoke cocktails crafted by renowned local mixologist, Tom Angel. Cocktail highlights include Ramona’s Martini; gin, yellow tomato, black petter vermouth and basil oil, Rossini Spritz; chardonnay agrodolce, vodka and roasted strawberry, and Averna Highball; Averna, grapefruit marmalade, lemon soda.

Head chef Ashley-Maree Kent is also the owner/operator of Ramona Trattoria and was most recently the head chef and owner/operator of Coolangatta’s iconic Cross-Eyed Mary. Named Urban List’s “2019 Young Chef to Watch” and a finalist in Appetite for Excellence’s “Young Chef National Awards”, Ashley-Maree made her mark in hatted restaurants across Australia and internationally including; Quay, Three Blue Ducks, Biota, Tartine Bakery, and Cabarita’s Paper Daisy.

“Ramona Trattoria is the result of my dream to open a small, inexpensive Italian restaurant in a casual setting that serves simple, traditional meals and delicious wines. Everything about the restaurant speaks to this ethos, from the worn-in aesthetic to the open kitchen and seasonal menu. I want families in Coorparoo to have a local place that feels familiar where they’ll be able to dine in and eat delicious food once or twice a week. Pasta is the hero dish. Handmade and shaped from scratch – every pasta shape that makes its way to the plate will have been kneaded and shaped by my own hands using traditional and artisanal tools.” Said Ashley-Maree.
