Hospitality group Milpa Collective (Bar Lucia, Santa Catarina, Calita, Londres 126, Carbon, Sonora) have announced the re-launch of their iconic Bondi taqueria Taqiza in a new space marking their sixth year. The Mexican cocktail bar will offer a refined selection of tequila, mezcal and creative cocktails along with their famous tacos.

Located in the heart of Bondi, Taqiza will continue to serve as one of the Eastern Suburbs local hangouts. The decision to relocate into one of the hospitality group’s other existing Bondi venues was to ensure they could keep up their close connection with the Bondi community but in a bigger and better space.

As the second iteration of Bondi’s crowd pleaser, Taqiza’s new look will make it an easy choice for those looking to quench their sun stirred thirst. The design of the new space will reflect the original Taqiza and bring light to the new Taqiza with its hacienda-inspired, palm springs and laidback luxury aesthetic. The reinvigorated chevron flooring, complimentary blush coloured lime walls and antiquated charm will transcend guests to a relaxed and refreshing atmosphere.

Milpa Collective Founders Pablo Vargas and Liber Osorio add, “Taqiza is our first venue, as our first child, we have a very special love for this venue. Over the last 6 years we had many great times, made lasting friendships, and worked alongside the most amazing people. From day one, we’ve been lucky to be supported by our community, and we want to take the opportunity to say thank you from the bottom of our hearts to everyone who has ever dined with us. Today is time to present a better version of Taqiza for our guests, our community, and our staff. We have Taqiza for many years to come, hope to see you soon for tacos and mezcal!”

Taqiza will continue to host both up-and-coming and established Latin bands every Sunday and will have a Vinyl DJ booth with DJs playing different styles of music every Friday.

The re-launch will see Taqiza remain a breath of fresh air for Bondi with the largest selection of mezcals in the Bondi area. There will be a focus on their exhaustively researched library of agave spirits with over 150 bottles including lesser-known distilled spirits such as Sotol. Key highlights that will be available include 5 Sentidos Arroqueno, Derrumbes Michoacan and Balta Wild Tepeztate.

To compliment the unique liquors paying homage to Mexican tradition, Taqiza will also continue to offer a range of both classic and adventurous cocktails. The cocktail menu will be led by Luna Ercoli who is also Head Bartender at the recently launched Bar Lucia. Born in Rome, Ercoli developed a passion for mixology that took her across the globe at the age of 18 to discover new techniques, flavours and cultures. Luna worked in Spain at Paradiso Barcelona for a few years until she was given the opportunity to collaborate on Alquimico’s ‘From The Farm To The Bar’ project.

Taqiza will also work closely with independent supplier of premium spirits Agave Lux to create an “Agave Studio” with hopes of becoming the leading curated agave bar in Sydney. They will offer experiences such as tastings, masterclasses with the best producers and mixologists in Mexico, presentations of new and rare agave spirits, spectacular pairings and more.

The food menu will complement the beverages on offer as well as honour all of the classic dishes of Taqiza from the past six years as they remain along with new additions. As the name ‘Taqiza’ translates to “taco party”, there is no doubt that the menu boasts a variety of different tacos. Key menu highlights include the Tuna Tostadas with leche de tigre, Grilled Octopus with zarandeado sauce and bone marrow corn esquites, Quesabirrias and their iconic Queso fundido with their secret Oaxaca cheese mix and honey. On the taco selection, Taqiza offers a range of mouth-watering delights such as the famous Mexico City staple Taco al Pastor, the south-Californian Baja Fish Tacos and the Blackened Salmon Taco.

The venue is committed to using only the finest of produce and the most authentic of methods to create flavourful contemporary Mexican dishes. Taqiza will have a focus on quality ingredients with the unique dishes created using only traditional cooking methods paying recognition to homeland traditions. The new Taqiza is now open and will continue its status as a local gem and immersive experience of Latin American culture serving up delicious Mexican cuisine right in the heart of Sydney’s Bondi.
