In celebration of Negroni Week, three of Merivale’s best bartenders invited a few of us to an intimate tasting and masterclass. A personal take on the classic aperitif, Negroni.
At a welcoming neighbourhood speakeasy, Charlie Parker’s is located underneath Fred’s, a 60-seater restaurant focussed on ethically produce food. As you walk down to the basement, dark warm tones, surrounded by expose bricks and subdued lighting. There are cosy, intimate rooms as you walk through and and open kitchen.
Kicking of the launch under the watchful creators, we sampled the Negroni twists.
Cocktail: ‘Campari “dust” with Aperol, Dolin Blanc Vermouth, Beefeater London Dry Gin and Campari dust.
Food pairing: Mussels Escabeche, Garlic Sauce, Breadcrumbs, Parsley.
Cocktail: J&M’s with Glenlivet Founders Reserve infused with saffron and earl grey tea, smoked Campari, Cynar, Antica Formula, grapefruit zest and atomised gin.

Merivale is making sure that winter is anything but boring, with a diverse calendar of events and experiences across its vast portfolio of venues this season. Kicking off with the launch of Negroni Week on Monday 5 June till 11 June, Winter at Merivale will feature date nights, inspirational talks, rooftop parties, acoustic sessions and winter feasts.
Each of the three leading bars – J&M, the intimate cocktail bar in the historic Angel Hotel; Charlie Parker’s, the local Paddington bar exploring original flavours and innovative techniques; and Palmer & Co; the 1920s speakeasy in the heart of the CBD. In partnership with Campari, each bar will offer its own special take on the classic digestif, specially designed by Merivale’s best bartenders and enjoyed alongside live entertainment –

Merivale has also teamed up with Hahn to create the Hahn Academy, an inspirational series of free talks by ground-breaking visionaries who demonstrate a “never settle” attitude and continue to push boundaries to succeed in their careers. Held fortnightly over 16 weeks at four key Merivale venues – The Beresford Upstairs, Coogee Pavilion Rooftop, The Paddington and ivy – Hahn Academy will feature the formidable likes of Justin Hemmes, CEO of Merivale; Ronni Kahn, CEO and Founder of OzHarvest; Bruce Jeffreys, Co-Founder of Go Get; Simon Griffiths, Founder and CEO of Who Gives a Crap; Jeremy Tagand, Deus Ex Machina Motorcycle Design Director; and Nick Shelton, Founder, Director and Publisher of Broadsheet. Guests can also toast the talks with a special offer of four Hahn Super Dry beers for $20.
Coogee Pavilion will celebrate the global Moët Party Day on 17 June with three spectacular events on the iconic rooftop in collaboration with ELLE, Instyle, Vogue and GQ. The day will kick off with the ultimate champagne brunch ($120), followed by an exclusive acoustic session in the afternoon and the decadent Moët Gold Party at night ($40). Moët & Chandon Grand Vintage 2008 will also be available for $20 a flute and $120 a bottle at ivy, Establishment and Coogee Pavilion throughout the month of June.
Coogee Pavilion will also play host to Chandon’s ‘Coogee Be Mine’ – a series of fun and intimate speed dating nights, where singles can mingle over Chandon Happy Hour and champagne specials. The events will be spread over three Thursday nights in winter – 29 June, 20 July and 24 August.
Bastille Week will run from 10-14 July, celebrating the Fête nationale over seven days of festivities. Merivale will partner with internationally renowned champagne brands Ruinart, Moët & Chandon and Veuve Cliquot to celebrate across several venues. Ash Street will bring a French affair to Sydney with bespoke menus and styling at Felix and Ash St. Cellar, while over in Paddington, Danielle Alvarez will prepare ‘A French Feast from the Fireplace’ at Fred’s restaurant.
Throughout winter, The Newport will hold four long table dinners, hosted by Master Sommelier Franck Moreau and chief winemakers behind some of Australia’s top wineries ($125). Guests will enjoy a four-course bespoke menu courtesy of Executive Chef Jordan Toft, with matching wines pair carefully selected by Moreau – Henschke Estate with Johann Henschke (14 June); Leeuwin Estate with Phil Hutchinson (19 July); Wynn’s Estate with Sue Holder (30 August); and European Tour ( 20 September). Moreau will also host an intimate dinner at The Paddington with Villa Maria’s Senior Wine Maker David Roper and a specially created menu by Executive Chef Ben Greeno (20 June, $90).
